In 1874 there was this frequently made joke in New York where people would claim a man named Tom Collins was talking behind your back when you weren’t around. When you asked where this Tom Collins was, they would say “he’s waiting for you in the bar next door”, causing you to get angry and go out searching for him.
This cocktail is a non-alcoholic alternative to a Tom Collins, based on Nona June, a 0% gin from Ghent with 9 botanicals offering the drink citrus-like characteristics.
